Littleneck Clams

Clams
2 c. white wine (Vino Verde if possible)
2 shallots, chopped
2 tbs. minced garlic
1 stick butter
parsley

Stir all together. Let flavors heat for about 8-10 minutes, then add clams. Steam and stir frequently so that all clams pop open.

Cranberry Sauce

1 c. sugar
1 c. orange juice
1 12 oz. pkg fresh cranberries

In medium saucepan over medium heat, heat the sugar and orange juice. Stir in cranberries and cook about 10-15 minutes. Remove from heat and carefully put into serving bowl. Chill for at least 2 hours before serving.

Pumpkin Pie

1 Pillsbury Pie Crust
3/4 c. sugar
1/4 t. allspice
1/4 t. nutmeg
1/4 t. cinnamon
1/2 t. salt
15 oz. pumpkin
1/2 c. evaporated milk
1 c. milk
2 eggs, beaten

Heat oven to 425 degrees. Manipulate defrosted pie crust into pie place. Using a fork and knife, trim crust and then use front of fork to make a design in crust.
Combine remaining ingredients and pour into pan. Bake 15 minutes. Reduce oven temp to 350 and bake 45 minutes longer.

Broccoli Cheese Casserole

1 can cream of mushroom soup
1c. mayonnaise
1 egg, beaten
1/4 c. onions, chopped
3 10 oz. pkg frozen chopped broccoli
8 oz. shredded sharp Cheddar cheese
salt, pepper, paprika

Preheat oven to 350 degrees. Butter a 9 x 13 baking dish.
Whisk together soup, mayo, egg, and onions.
Place frozen broccoli into a very large mixing bowl. Break it up. Using a rubber spatula, scrape soup-mayo mixture on top of broccoli and mix well. Sprinkle on cheese and mix well. Spread mixture into prepared baking dish and smooth top of casserole. Season with salt, pepper, and paprika.

Bake for 45 minutes to an hour.

Ham and Egg Strata

Serves 8-10

  • 12 slices bread, trimmed and cubed
  • 10 oz pkg. chopped broccoli, thawed and drained
  • 2 c. ham, diced
  • 2 c. Cheddar cheese, shredded
  • 6 eggs, slightly beaten
  • 3.5 c. milk
  • 2 t. dry onions
  • ½ t. salt
  • ¼ t. dry mustard

Cover bottom of buttered 9×13 inch pan with half of the bread crumbs. Layer broccoli, ham, and cheese over bread. Top with remaining bread crumbs. Combine eggs, milk, onions, salt, and mustard. Pour over strada. Cover and refrigerate overnight. Bake at 350 degrees until knife comes out clean, about an hour. Let stand 10 minutes and cut into squares.

Melissa’s Mother’s Sweet Potato Pie Casserole

  • 3 c. mashed cooked sweet potatoes
  • 1 c. sugar
  • 1/2 c. butter
  • 2 eggs
  • 1 t. vanilla
  • 1/3 c. milk

Mix all ingredients together and put in casserole. Cover with crunchy topping and bake at 350 for 30 minutes

Crunchy Topping:

  • 1 c. brown sugar
  • 1/2 c. flour
  • 1/3 c. butter
  • 1 c. chopped walnuts or pecans

Combine all ingredients. It will be crunchy (that’s why it’s called crunchy topping!) Sprinkle on sweet potato mixture.

Chicken Alfredo

1 can chicken, drained

thin spaghetti, cooked and drained

1 jar Alfredo sauce

brocolli flowerets, steamed

freshly grated parmesan cheese

1 T. butter

freshly ground pepper

Make spaghetti according to package directions. Heat Alfredo sauce. Steam broccoli and add to sauce. Add chicken and pepper.

When spaghetti is cooked and drained, add butter and fresh Parmesan. Stir until the spaghetti is nicely coasted. Put on plate and cover with Alfredo sauce. Salt and pepper to taste.

Beef Stew

1 lb. boneless beef cubes

1 can beef broth

1 can water

1/2 t. lemon juice

1/2 t. Worcestershire Sauce

1/2 clove garlic, minced

1/2 medium onion, sliced

1 sm. bay leaf, crumbled

1 t. salt

1/8 t. pepper

pinch Allspice

1/2 t. sugar

3 carrots, peeled and sliced

1-2 potatoes, peeled and cubed

4 sm. onions

Brown meat thoroughly. Add all ingredients except carrots, onions, and potatoes. Cover tightly. Cook 1 hr. and 45 min. Add veggies. Cook another half hour, until meat and potatoes are tender.

Chicken Alfredo

16 oz. linguini

2 c. fresh broccoli

4 T. butter

2 lbs. boneless chicken breasts, cut into 1-1 2/2 in. pieces

Pancetta

Green onions

2 cans Cream of Mushroom soup, fat free

1 c. milk

1 c. Parmesan cheese

1/2 t. pepper

Prepare linguini. Add broccoli during last 4 min. of cooking. Drain linguini and broccoli well in colander.

Heat butter in skillet over med. high heat. Add chicken and cook until well browned. Cook pancetta until crispy.

Stir soup, milk, cheese, pepper, and linguini mixture into skillet. Add green onions. Cook until mixture is hot and bubbling. Serve with additional Parmesan.

Meatloaf

1/2 c. ketchup

1 T. Worcestershire sauce

2 eggs

1/2 bread crumbs

1/2 c. chopped onions

1/3 c. pepper, chopped

1/3 c. parsley

1 T. minced garlic

1/2 t. dried thyme

Sauce:

1/2 c. ketchup mixed with 1 T. water and 1 t. Worcestershire sauce

Heat oven to 425. Line a rimmed baking sheet w/foil.Whisk ketchup and W. sauce, 2 large eggs, and 1/2 t. salt in a large bowl.

Add bread crumbs, onions, pepper, parsley, garlic, thyme, 1 1/4 lb. ground beef. Mix well w. hands. Form into four 5 in. long loaves into pan.

Bake 20 min. Serve with sauce, above.

Ham and Eggs Strata
20 slices white bread, crusts removed
1 1/2 lb. ham sliced very thinly and then cut into 1 inch pieces
10 oz Swiss cheese, grated
10 oz Cheddar cheese, grated
6 eggs
3 c. milk
1/2 t. salt
1/2 t. onion salt
1/2 t. dry mustard
1/2 c. melted butter
3 c. crushed Corn Flakes
1st Layer; Cut bread slices in half and arrange 1/2 the bread in a greased 19×9 in. pan.
2nd Layer: Sprinkle half of the ham over bread.
3rd Layer: Sprinkle half of the Cheddar and Swiss cheese on top.

Repeat all three layers. Beat eggs, milk, seasonings. Pour over the layers. Cover and refrigerate overnight. Before baking, make topping of melted butter and Corn Flake crumbs and sprinkle over strata. Bake @375 for 50-60 minutes. Let stand 10-15 min. before serving.
